Tire Sizes

Okay so i'm trying to figure out what size tire will fit my 18x8.5 rim with a 35mm offset without rubbing and definitely without rolling my fenders. I've searched the forums on here and i haven't found a straight answer. I see some people have 255, 245, 235 and so on. How much difference in size is there really between some companies tires? is it like 20mm, 10mm, 5mm? Or am i just going to have to go to a tire place and do some trial and error with a bunch of sizes? I just don't want to have to roll my fenders. Oh yeah i have a 1997 talon tsi AWD and i have tein flex coilovers so i can adjust my height and the stiffness.

235/45/18 would do you fine + with coilovers no problem fitting them under.
